His farm in Huila has become a playground for controlled experimentation, where every variable is tuned to bring out the cleanest, brightest expression of each variety.

For this lot, Wilder leans into a slow, temperature‑stabilized anaerobic process that keeps the fruit’s natural character intact. The cherries rest in cool spring‑water‑chilled tanks with whole lemongrass plants, allowing the fermentation to stretch without drifting into boozy territory. Afterward, the coffee dries gently in his marquesina, preserving the delicate structure that makes Geisha so prized.

The cup is stunningly aromatic and refreshingly layered.
